Located in Warwick, Dough & Brew is a quality purveyor of authentic flavours in a relaxed atmosphere.

Dough & Brew opened in June 2016 and is located on Brook Street, five minutes walk from the beautiful castle and one minute from the historic Lord Leycester Hospital & the Market Place. Serving both sourdough pizza, buttermilk fried chicken and freshly made dishes alongside an incredible range of local craft beers and delicious wines.

The emphasis is always on flavour using where possible locally sourced great quality ingredients. Where we can we create the dishes from raw ingredients to ensure fresh, healthy flavours.

Dough & Brew's interior, designed by owner John Martin, brings something different to Warwick whilst giving a relaxed atmosphere for people to enjoy great food. The layout offers shared dining space as well as individual tables and al fresco dining when the weather conforms!

Hey Pesto…& other magical sauces!

Making a simple pesto

Our video guide is on our YouTube Channel here but here are some recipes for different pesto.

Pesto

250g Basil or Wild Garlic (or roasted red peppers or butternut squash)

300ml Extra Virgin Olive Oil

1 tsp Truffle Oil

Juice of 1 lemon

4 cloves of garlic

2 tbsp toasted nuts (Pine, hazel, walnut etc)

50g freshly grated parmesan

sea salt & pepper

Salsa Verde

2 cloves of garlic

2 big handfuls parsley

1 bunch basil

1 handful fresh mint

1 small handful capers

1 small handful cornichon (gherkins)

6 anchovy fillets

1 tbsp dijon mustard

2 tbsp red wine vinegar

8 tbsp extra virgin olive oil

1 tbsp truffle oil

sea salt & freshly ground pepper

Our quick & easy banana bread…

Banana Bread

130g Self Raising Flour

130g Butter

130g Sugar

2 eggs

2 ripe bananas

1 tsp vanilla paste

1 tsp baking powder

optional:

2 tbsp vegetable oil

2 tbsp malt extract

Ragu

This delicious & flavour packed ragu is a great batch cook & versatile dish..create a great chilli or pie with it too!

Beef Ragu

1 kg Beef (Chuck, Skirt or mince with 20% fat)

4 Red Onions finely diced

30ml Red Wine Vinegar

4 Cloves Garlic finely grated

3 Carrots finely diced

3 sticks of celery peeled & diced

½ Bottle of red wine 

½ ltr Miso Stock

¾ ltr Beef stock

2 Cans of tomatoes (Or roast down 1kg of good fresh tomatoes)

3 Dried Porcini mushrooms

4 Dried Shiitake mushrooms

2 Anchovy Fillets

100ml oil

30ml Truffle Oil

1 Bouquet Garni

1 tsp Ground Nutmeg

2 Bay Leaves

3 tbsp Tomato purée (heaped)

200g Bacon lardons

4 tsp Dried Thyme or large bunch of fresh

Salt & Pepper
